Before and After

On Friday, I was looking for an easy meal to make, so I pulled this recipe for Tortellini Soup out of my recipe binder. It's basically just a list of ingredients to dump together in a pot and bring to a boil.

My kind of cooking.



When I looked at the date, I was taken aback. My sister-in-law sent this to me one day before Jack's accident. At that point, I was gearing up for the new school year, planning quick meals I could make on busy weeknights of baseball, soccer, and scouts. I was wondering what it would be like to have a middle schooler in the house. On the bottom of the page, I'd scribbled a note about an upcoming field trip for Margaret's class. Nothing too exciting.

September 7-- mundane.

September 8-- shattered.

Oh how often there is a clear before and after in our lives! I remember looking through my mom's check register after she died. There she was paying bills and doing the routine tasks of life, until she wasn't.

Sometimes before and afters are positive. They can denote a marriage, a decision to take care of your health, a career change.

Other times, they represent the day the world came crashing down.

If there is a clear before and after in your life, due to death, illness, or a time someone harmed your body or your heart, I'm sending you love today.

After is different. After is often hard.

But after doesn't mean over.

Food for the Body and Soul

Despite my near obsessive hand-washing, I've come down with something. We're going to just hope it's a cold and not the dreaded f-word. Get your mind out of the gutter; you know I mean the flu, right? In serious need of some comfort food, so this is what I'm throwing in the crockpot tomorrow morning--  my favorite White Chicken Chili.

I know you may have other White Chicken Chili recipes, but this one requires no browning or pre-cooking and if you buy frozen onions like I do, no chopping at all. Just dump everything in and walk away. I can't stand it when a crockpot recipe requires prep! Seriously, who has time to cook dinner at breakfast time?

3 Steps to Bliss: Oreo Truffles!

Okay, so you may want deeper insights on bliss this Monday morning, but if you whip up these 3-ingredient Oreo Truffles, I think you won't be disappointed!


Ingredients:
1 package Oreo Cookies
1 brick of cream cheese, softened
1 pack of white chocolate chips

Crush Oreo cookies into a fine powder. I beat them to death in a plastic bag since I don't have a food processor.

Mix the crumbled cookies with the softened cream cheese and form into one inch balls. Place balls on a wax paper lined cookie sheet and place in freezer for a few minutes to firm up.

Melt the chocolate chips or baker's chocolate in the microwave and dip the balls into chocolate to coat. This is messy. You may want to wear gloves. Mine weren't perfectly round, but that's okay.

Refrigerate for an hour, then ENJOY!
